Hummus and Tomatoes


This delicious Sprouted Hummus on tomatoes and topped with olives is not only a lovely way to serve a protein-rich snack or lunch but also looks like cute little french men with hats.Raw Vegan Protein SourceGarbanzo beans are as high in protein as nuts but have much less fat. They are a great protein source for raw vegans who are avoiding fat or have trouble digesting nuts.

Ingredients1.5 cups garbanzo beans, soaked for 24 hours (Change water every 12 hours)Juice of 1 lemon1 clove garlic

, chopped finelySalt to taste

Dash of paprika

3 medium tomatoes

Directions

1. Mix garbanzo beans, lemon juice, garlic, and salt in food processor, pulsing until texture looks as pictured above

2. Slice tomatoes

3. Spoon hummus on to sliced tomatoes and top with a half pitted olive.4. Sprinkle a little paprika on top.
